It all started with a crawfish pond and a dream.

1991

Scott Broussard and Jim Barbin purchase The Crawfish Nest, a retail drive-through store for boiled crawfish. The same year Scott, along with a few of his family members, develop a proprietary all-purpose seasoning blend that would later be called Cajun Bayou Blends—a seasoning blend that, whether you know it or not, is used in many of the state’s popular crawfish restaurants both in the kitchen and on the table. Not satisfied with only owning a retail shop, the two opened Acadia Crawfish, LLC that same year, as a small-time operation delivering crawfish part-time and only as far as Texas.

Acadia Crawfish continues to grow with the addition of a second route to North Louisiana. Scott, who is still selling cars as his full-time job, finally feels comfortable enough in the growth of his business to quit his day job and focus on Acadia Crawfish full time.

Acadia Crawfish continues to grow with the addition of a second route to North Louisiana. Scott, who is still selling cars as his full-time job, finally feels comfortable enough in the growth of his business to quit his day job and focus on Acadia Crawfish full time.

DEFINING ROLES
1998

Scott, with plans to further expand Acadia Crawfish beyond South Louisiana, becomes the sole owner of the company as Jim Barbin makes the decision to dedicate his time completely to maintaining their original business, The Crawfish Nest.

Crawfish becomes more accessible as both local and national grocery chains begin to carry the Cajun delicacy. You no longer need to find a specialty seafood market to have a crawfish boil or a bowl of etouffee; instead, you can walk into most stores around the nation and buy everything you need. This causes demand to skyrocket not only during crawfish season but year-round.

 BREAKING GROUND
2015

Acadia Crawfish breaks ground on a new, larger processing facility and wholesale dock blocks down from their original location. This new facility, designed with expansion in mind, is utilized as Acadia Crawfish’s base of operations to meet the growing demands for crawfish both in- and out-of-state.

Today, Scott Broussard and his family are still the owners of Acadia Crawfish, LLC where they continue to sell and ship crawfish and their signature Cajun Bayou Blends seasoning to homes, restaurants, and businesses across the United States. It is one of the largest crawfish distributors in Louisiana and is considered one of the most reputable wholesale facilities in the state.
