Frequently Asked Questions
WHERE ARE Y'ALL LOCATED?
We are located on our farm in Crowley, Louisiana right in the heart of Cajun Country.
DO YOU SEND DIRECTIONS ON HOW TO COOK THEM?
We’ve created a simple blog on how to properly boil your crawfish and offer a number of recipes on different ways to cook them!
HOW BIG ARE YOUR CRAWFISH?
Varies depending on the season, but we source only the highest quality and biggest crawfish our ponds can produce for all of our customers. Contact us when you’re ready to order and we can let you know the general size of our crawfish at that time!
HOW MUCH CRAWFISH SHOULD I BUY?
That depends on how big of a party you’re having! If they’re the main protein, we recommend 3-5 pounds of crawfish per person.
WILL THEY SHOW UP ALIVE?
Yes! Your crawfish should arrive alive, though they’ll be a little sluggish Call us immediately once your crawfish arive if you run into any problems at all. We need to know if something went wrong so that we can prevent any issues for other customers in the future.
DO WE PICK THEM UP AT THE AIRPORT?
In order to make sure our crawfish are delivered as quickly and as freshly as possible, yes, we make arrangements with your local airport for pickup.
HOW DO YOU KEEP THEM ALIVE?
As soon as you get your crawfish home:
- Line a large cooler with newspaper
- Put the sack of crawfish on its side in a large cooler out of direct sunlight
- The chilled crawfish will be sluggish. Let them return to room temperature to get them moving
- Spray crawfish with water to rejuvenate
- Leave the drain in the cooler open and elevate the other side slightly so water can drain out
- Place unopened bags of ice or ice packs over the sack, wet burlap, or towels, to keep your bugs cool and fresh
- Maintain 36°F to 46°F
- Leave the cooler lid cracked open so the crawfish can breathe
- Do not store or soak your sacks of crawfish in water or you’ll risk killing your crawfish!
As long as you replace the ice as needed, you can store crawfish on ice for several days without killing them but keep in mind that the fresher your crawfish are, the better they’ll taste.
HOW DO YOU PEEL CRAWFISH?
No seasoned vets at your crawfish boil? No problem! It’s as easy as: pinch, peel, eat and repeat! Check out our blog for a quick step-by-step guide on peeling crawfish.
WE’VE NEVER DONE THIS BEFORE. IS IT EASY?
You need an outdoor area and of course the right cooking equipment, but anyone can boil crawfish! Head over to our blog for easy directions for hosting your first boil.
WHEN’S THE SEASON?
There is no legal season, but we start shipping as soon as we feel the crawfish can make the trip, usually mid-January until late June. Learn more about crawfish season on our blog!
WHEN’S THE BEST TIME TO ORDER?
We think the prime time for crawfish is March, April and May, but that can depend on a lot of factors.
CAN I HOLD THEM OVERNIGHT?
Yes, you can! Live crawfish will arrive in an insulated box with special gel ice packs that supply the refrigeration for shipping. Chances are the gel packs will be exhausted by the time you receive your crawfish. Therefore, you must refrigerate them (the crawfish) as soon as possible. Ideal temperature is 36- 41° F. If you don’t have access to a refrigerator large enough to hold the shipment, no worry, you can use regular bagged ice and an ice chest. Simply open the box that they arrived in and remove the mesh bag of live crawfish. You can discard the gel packs but retain the burlap cloth that covers the mesh bag. Check to make sure they are alive. We recommend a thorough rinsing of crawfish. Keep them in the sack, place them in shade and rinse with cool water until draining water is clear (it’s normal for the drain water to be dirty at first). Now place the mesh bag containing the crawfish into an ice chest or the box they came in. Cover them again with the burlap cloth. Open the drain plug and position the chest so excess water will drain. If using the box they arrived in, punch holes in the corners so water will drain or if you don’t want to ruin the ice chest they come in, you can monitor and drain water manually. Place box and crawfish in a cool place, preferably in the shade outside. DO NOT LEAVE THEM IN THE SUN. Ideally, crawfish should not be stored in standing water. Punch some holes in the plastic ice bag. This will allow the melting ice to drip onto the crawfish. Place bagged ice on top of live crawfish. One 8# bag of ice should be enough to hold small orders (10- 15#) overnight. For larger orders, we recommend two 8# bags of ice for every 15 pounds.
SHOULD I PUT THEM IN WATER?
No, you should not submerge crawfish in water once we have shipped them. Contrary to popular belief, crawfish, especially when under stress from the shipping process, can drown.
HOW MANY POUNDS OF CRAWFISH DO YOU RECOMMEND PER PERSON?
As a meal size we recommend 3 lbs per person. This recommendation is based on serving the crawfish with corn and potatoes.
