1 pack Fettuccini noodles
1 stick of butter
1 large onion chopped
1 bell pepper chopped
1 pack of tasso chopped into small cubes
1 block of velveeta Mexican hot cheese
Tony Chacheres and Cayenne Pepper to taste
1 can of hot diced rotel
2 packs of Acadia Crawfish Tail Meat
1 cup Milk
In a large saucepan boil the noodles until soft. Add the crawfish to the noodles in the water and let sit for 2 to 3 minutes. Drain and rinse.
In a separate saucepan while cooking the noodles and crawfish, add butter, onions,bellpepper and tasso and rotel, and sautee until cooked down good. Once this is done add the cheese. I start out with 1/2 block of cheese and 1 cup of milk. Cook this on a low to medium fire. Make sure you are stirring often so that it will not stick to the bottom. When it is fully melted and looks like it is creamy, add the rest of the cheese and then repeat until melted. Once this is done, begin adding the noodles and crawfish. Add seasoning to taste preference. Once it is all mixed up let sit for 5 minutes and it is ready to serve. Enjoy.
